Peppadew® Roasted Red Peppers

Method

  1. Add the pasta to a pan of boiling water and simmer for 12 minutes.
  2. Put the rest of the ingredients in to a blender, and blend until smooth.
  3. Drain the pasta and stir in the roasted red pepper sauce and pour in to a baking dish (add cheese now if using).
  4. Put in a preheated oven at 200C/390F for 15 minutes until the top has crisped up.

  • 280g pasta spirals
  • 4 Peppadew® roasted red peppers
  • 60ml/0.25 cup vegetable stock
  • 1 small white onion
  • 3 garlic cloves
  • A pinch of sea salt and black pepper
  • 10 basil leaves
