Mild Peppadew® Piquanté Peppers

Method

  1. Put all of the ingredients into a large casserole dish and mix well.
  2. Put in a preheated oven at 190C for 35 minutes, stirring half way through.

  • 6 sausages (I used Cauldron vegetarian sausages)
  • 300g sweet potato, peeled and diced
  • 1 red onion, cut in to chunks
  • 8 cherry tomatoes
  • 200g pineapple, cut in to chunks
  • 8 Peppadew® Mild Piquanté Peppers
  • 1 yellow pepper, diced
  • 1 tbsp olive oil
  • 2 tsp Jerk seasoning
