Mild Peppadew® Piquanté Peppers

Method

  1. Mix the pineapple juice, lime juice, olive oil, Peppadew® brine and brown sugar together in a bowl. Add the spring onions and mix well. Add the chicken to the mixture, toss well to coat. Marinate for 2 hours, turning twice.
  2. Thread chicken, pineapple and Peppadew® onto skewers.
  3. Grill under a preheated grill or over moderate coals for 12-15 minutes or until chicken is cooked and pineapple lightly Remove from heat and serve with wedges of lime.

Ingredients

  • For the marinade:
  • 250ml pineapple juice
  • Juice of 3 limes
  • 45ml olive oil
  • 45g brown sugar
  • 1 tbsp Mild Peppadew® Piquanté Pepper brine (juice)
  • Salt and freshly ground black pepper to taste
  • 3-4 spring onions, roughly chopped
  •  
  • For the kebabs:
  • 6 chicken breast fillets, cut into 2.5cm cubes
  • 1 pineapple, peeled and cored, cut into bite-size chunks
  • 1 x jar Mild Peppadew® Piquanté Peppers, drained
  • Lime wedges for serving
