Peppadew® Roasted Red Peppers

Method

  1. Add the oil to a large pan and add the onion, garlic, carrot and celery and gently cook for 4 minutes.
  2. Add the tomatoes and Peppadew® Roasted Red Pepper and cook for a further 2 minutes.
  3. Add the water, basil, salt and pepper and balsamic vinegar and bring to the boil and then simmer for 10 minutes.
  4. Blend until smooth.

Ingredients

  • 1 tbsp olive oil
  • 1 Peppadew® Roasted Red Pepper
  • 6 tomatoes
  • 1 small carrots, diced 1 stick of celery, diced
  • 2 cloves of garlic, crushed
  • 1 medium onion, diced
  • 1.25 pints of boiling water
  • 10 basil leaves
  • A pinch of sea salt and black pepper
