Borlotti Brazil burgers


with Mild Peppadew® Piquanté Peppers

This great burger has to be one of the best dishes to serve to friends for a casual get-together.

Mild Peppadew® Piquanté Peppers

Method

  1. Tip the beans into a bowl and mash them roughly.
  2. Heat the oil in a pan and fry the onion, carrot and celery until softened.
  3. Add to the beans with the chopped Peppadew®, nuts, breadcrumbs and parsley. Season with salt and pepper and mix well.
  4. Shape the mixture into 6 patties and chill on a plate lined with cling film until firm.
  5. Heat a skillet on the barbecue, brush it with oil and add the burgers. Cook over medium heat for 12-15 minutes, turning once. Serve on burger buns with rocket and créme fraîche, and garnish with more Peppadew®.

Ingredients

  • 400g can borlotti beans, rinsed and drained
  • 1 tbsp olive oil, plus extra for grilling
  • 1 small red onion, finely chopped
  • 1 carrot, grated
  • 1 celery stick, finely chopped
  • 6 Mild Peppadew® Piquanté Peppers, drained and finely chopped, plus extra to serve
  • 50g Brazil nuts, roughly chopped
  • 100g fresh wholemeal breadcrumbs
  • 2 tbsp chopped fresh parsley
  • Salt and pepper
  • Burger buns, rocket, and créme fraîche to serve
